My latest and greatest cookie experiment.....recipe is here, such that it is, and if your tastebuds are like mine, these taste a lot like the CostCo Aussie Bites. That was a super happy surprise, but if you are still eating things like Aussie bites, then these may not quite live up to your expectations. However, if you have adopted a less-processed, less-refined manner of cooking, you might appreciate this sweet treat.

In food processor, combine:
2 C navy beans
1 ½ C whole dates plus water*
3 Tbs plus 6 Tbs water (mix and let sit for a
minute)
¼ C molasses
1-2 tsp vanilla
½ tsp salt
1 ½ tsp baking soda
2 C oats
Dump dough into a bowl and add:
1 to 2 more cups oats, depending on stickiness
of dough
½ c sunflower seeds
½ C shredded unsweetened coconut
½ C almonds, chopped
¾ C golden raisins
Directions:
*Put whole dates in a bowl, add water to
half-cover, microwave for 2 min and let set – then pick off any hard ends or
pits, and use all water and dates.
Combine.
Form into cookies on a greased cookie sheet.
Bake 350 until firm-ish to touch, medium brown
on bottom.
